Tawa Gunjo Gyuto 210mm
A versatile knife known as a chef's knife overseas. The shape is different from Santoku and Bunka, and the blade length varies from about 170 mm. The main length used at home is approximately 210mm to 240mm.
Manufactured in Seki City, Gifu Prefecture, this series uses rust-resistant VG10 stainless steel as the core material. The characteristics of the Tawa Gunjo series are that the blades are thick and wide, so they can easily cut through ingredients with their weight without using any force, and the ingredients are separated easily. Additionally, the blade has a Damascus pattern finish. The handle has a Western-style shape and is made of blue plywood to make it thicker, so you can grip it firmly.
