Miraiden R2 Damascus Sujibiki 230mm
With a relatively long blade length of approximately 210–300mm, this knife features a slim blade that is well suited for thinly slicing boneless meat and fish.
Miraiden is a concept and brand developed by Tower Knives over many years, based on the mission of “passing down the traditional techniques of Japanese knife making to future generations.”
This series features stain-resistant R2 steel as the core steel, offering excellent edge retention. Since the blade tends to maintain its sharpness even during extended use, this series is also popular among professional chefs.
The handle is an octagonal Japanese-style handle made from either black pakkawood or natural rosewood and cherry wood.

Sujibiki
A long and narrow blade designed to slice and clean meat, by removing tendons, skin, and fat. Due to its length, the sujibiki is often used in a pulling motion. It can also be used to thinly cut soft vegetables such as tomatoes, fruits, as well as fish fillets. Its typical length is approximately 210mm to 270mm.
